Serve as fruit compote or as a topping for ice cream. Ingredients:
1 1/2 lbs mixed dried fruit (raisins, kiwi, pears, apricots, whatever you like) |
2 1/2 cups water |
1 cup brown sugar |
1 tablespoon honey |
1/2 lemon, rind of |
1/8 teaspoon nutmeg |
1/8 teaspoon ground ginger |
1 cinnamon stick |
3 tablespoons cornstarch |
1/4 cup cointreau liqueur |
Directions:
1. Put dried fruit in crock pot, and pour in water. 2. Stir in sugar, honey, lemon peel, and spices. 3. Cover and cook on low for 2 to 3 hours. 4. Turn heat up to high. 5. Mix cornstarch in a little water; stir into fruit mixture. 6. Cook on high until thickened (10 minutes). 7. Stir in Cointreau. 8. Serve warm or chill. |
