Instead of fine dry bread crumbs I used 5 grain soda crackers whisked in the blender for the bread crumbs. Instead of grated onion I used finely chopped up green onions, and 2 cloves of mashed garlic and black pepper and about a 1/4 cup grated parmesan cheese. Simple ingredients and yet quite a tasty meatloaf. I also ground my own beef. I really like the addition of freshly ground nutmeg in the sauce. Ingredients:
2 beaten eggs |
3/4 cup milk |
2/3 cup fine dry breadcrumb |
2 tablespoons grated onions |
1 teaspoon salt |
1/2 teaspoon ground sage |
1 1/2 lbs ground beef |
1/4 cup catsup |
2 tablespoons brown sugar |
1 teaspoon dry mustard |
1/4 teaspoon ground nutmeg |
Directions:
1. Combine eggs with milk, bread crumbs, onion, salt, sage, and meat. Mix well and shape into 9x5-inch rectangle or oval, or about 6 inches round. Carefully place in slow cooking pot. Cook on low for 5 to 6 hours. (I cooked it for 5 hours). 2. Combine sauce ingredients in small bowl; pour over meat. Cover and cook on high 15 minutes longer. Slice and serve while hot or use cold slices for sandwiches. Makes 6 servings. 3. Crockery Cookery. |
