I threw this together for an office luncheon and it was very yummy! Plus, it's simple to throw together and it's healthy, too! Ingredients:
1 rotisserie-cooked chicken (already cooked, from the deli) |
1 (8 ounce) jar salsa |
1 lime, juice of |
1 (1 1/4 ounce) packet fajita seasoning mix |
1 teaspoon garlic powder or 1 teaspoon garlic salt |
1 (20 ounce) bag frozen peppers and onions |
Directions:
1. Remove skin from chicken and pull meat off the bones. Shred and throw into a bowl. 2. Dissolve fajitas seasoning and garlic powder/salt in the lime juice. 3. Pour mixture over chicken and mix to coat. 4. Add chicken mixture, salsa, peppers and onions to the crock pot. 5. Warm on low 3-4 hours, until heated through. 6. Serve in tortillas with favorite toppings or on top of a salad. |
