Ingredients:
2 chicken breasts |
1 can(s) rotel tomatoes |
1 can(s) corn (do not drain) |
1 can(s) black beans (drained & rinsed) |
1 package(s) ranch dressing mix |
1 tablespoon(s) cumin |
1 teaspoon(s) chili powder |
1 teaspoon(s) onion powder |
1 package(s) cream cheese (8oz.) |
Directions:
1. Put the chicken in the crock pot. 2. Top with the corn, drained and rinsed beans, ranch dressing, cumin, onion and chili powder. 3. Stir to combine then top with the cream cheese. 4. Cook on low for 6-8 hours, stirring one or twice 5. to blend in the cheese. 6. Shred the chicken into large pieces 7. and serve over rice. 8. (This would also make an excellent dip!) |
