Tomatillos are the key ingredient in this recipe. Fresh and cooked they are used in Latin American green sauces. I found the Tomatillos and chicken combination very delicious! Slowly cooked, this chicken recipe has fresh new flavors that absolutely deserves to be discovered. The tomatillo is a small round fruit covered with a parchment-like, green husk. Fruit resembles a green cherry tomato and it's flavor is lemony and slightly acidic. Don't forget to remove the husks before using them. Ingredients:
1 roasting chicken |
1 onion (diced) |
1 celery rib (diced) |
3 garlic cloves (whole) |
8 tomatillos (diced) |
1 red pepper (diced) |
1 teaspoon salt |
1/2 teaspoon pepper |
1/2 teaspoon paprika |
Directions:
1. Season chicken with salt, pepper and paprika. 2. Add salsa and arrange all around chicken. 3. Cook at low temperature for 6 - 8 hours. |
