Crock Pot Chicken Italiano |

A great meal. My family loved it. Just make sure you don't overcook the chicken if you have cut it up into chunks (like I did the first time....I THOUGHT it was on low). Ingredients:
4 boneless chicken breast halves, cut into bite size pieces |
1 (16 ounce) can tomatoes, diced |
1 carrot, peeled and diced |
1 teaspoon dried oregano |
1/2 teaspoon salt |
1 large green pepper, diced |
1 medium celery rib, diced |
1 bay leaf (remove before serving) |
1 teaspoon dried basil |
1 garlic clove, chopped |
1/2 teaspoon red pepper flakes |
1/2 cup grated parmesan cheese or 1/2 cup romano cheese |
Directions:
1. Mix all ingredients EXCEPT grated cheese; put in a crock pot. 2. Cook on LOW for 6-8 hours. 3. Sprinkle with grated cheese before serving. 4. Serve over rice or pasta. |
