Crock Pot Chicken Cacciatore for Two |

Delicious and simple. Throw everything in the Crock Pot and let it go. Uses simple ingredients and tastes wonderful! I always make some pasta and pour it over. Ingredients:
2 boneless skinless chicken breasts, frozen |
1 (14 1/2 ounce) can hunt's diced tomatoes with basil oregano and garlic |
4 -6 white button mushrooms, diced in big chunks |
1/2 cup diced green pepper |
1 tablespoon sugar |
1 teaspoon italian seasoning |
1/2 teaspoon crushed red pepper flakes |
salt and pepper |
Directions:
1. Add everything to the Crock Pot (no need to thaw the chicken) and stir until well-blended. 2. Cook on low for 4-5 hours, stirring occasionally. 3. After about 4 hours, I usually fish the chicken out and shred it with a fork because it's easier to eat over pasta that way, and then I let it cook another hour or so. 4. Serve over pasta or rice for a tasty, simple meal. |
