Crock Pot Black Beans and Rum  |

                    This is adapted from “The Unwatched Pot”. I bet this would freeze very well either on its own or as a burrito filling. It would be fun to do a  theme night  with this one... Play some Bob Marley or rent Cool Runnings. Serve some pineapple-mango salsa and have some fun with it! Ingredients: 
                    
                        
                                                1 lb dried black beans  |  
                                                1 ham hock  |  
                                                1 small onion  |  
                                                2 whole cloves  |  
                                                1 garlic clove, minced  |  
                                                1 tablespoon parsley, chopped  |  
                                                1 bay leaf  |  
                                                1/2 teaspoon thyme  |  
                                                1 cup water  |  
                                                2 tablespoons flour  |  
                                                1/4 cup rum  |  
                                                1/2 teaspoon tabasco sauce  |  
                                                sour cream  |  
                                                
                     
                    Directions: 
                    
                        
                            
                                1. Place beans in slow cooker and add next 7 ingredients. 2. Cook on low for 8 hours. 3. Remove ham and bay leaf. Cut meat off the bone; return to pot. 4. In a bowl, combine flour, rum and Tabasco sauce. Stir into beans and blend well. 5. Serve with sour cream.                              |
