Another recipe from the Campbell's Slow Cooker cookbook. This simple casserole consists of ground beef, tomato soup, diced tomatoes with green chiles, corn tortillas and cheddar cheese. Ingredients:
2 lbs ground beef |
1 (10 3/4 ounce) can condensed tomato soup |
1/2 cup water |
1 (14 1/2 ounce) can diced tomatoes and green chilies |
8 (6 inch) corn tortillas, cut into 1/2-inch strips |
1 cup shredded cheddar cheese |
3 green onions, chopped |

Directions:
1. Cook beef in 2 batches in large skillet over medium-high heat, stirring to separate meat. Pour off fat. 2. Mix beef, soup, water, tomatoes and tortillas in a 3 1/2- to 5-quart crock pot. 3. Cover and cook on LOW for 7 to 8 hours or on HIGH for 4 to 5 hours. Stir in cheese. Cover and cook 5 more minutes. Sprinkle with green onions and serve with sour cream. |
