I found this recipe in a magazine. It is easy and makes great fajitas. I like the one pot cooking. Ingredients:
1 1/2 lbs flank steaks |
1 onion, sliced |
1 tablespoon cilantro |
1 teaspoon ground cumin |
8 ounces chopped tomatoes |
4 ounces chopped green chilies (small can) |
1 green pepper, sliced |
1 red pepper, sliced |
2 garlic cloves, minced |
1 teaspoon coriander |
1/4 teaspoon salt |
12 flour tortillas |
sour cream |
guacamole |
shredded cheddar cheese |
salsa |
Directions:
1. Cut steak into 6 portions and place in crock pot. Add remaining ingredients. Cover and cook on low for 8-10 hours, or on high 4-5 hours. Remove meat and shred using a fork to pull meat into stringy pieces. Return meat to pot and stir to blend. |
