Adapted from my friend Sam's Crock Pot BBQ Chicken. You can, of course, use regular maple syrup, but there's a big calorie difference. Ingredients:
2 lbs pork tenderloin |
2 cups ketchup |
1 cup sugar-free maple syrup |
1/4 cup worcestershire sauce |
1/4 cup prepared spicy brown mustard |
2 teaspoons chili powder |
2 teaspoons garlic powder |
1 teaspoon mustard powder |
1/2 teaspoon ground cumin |
1/2 teaspoon ground cinnamon |
Directions:
1. Cut each tenderloin in 3 pieces. Combine all ingredients in slow cooker. Cook on low 6-8 hours. 2. Remove meat to a plate. Shred meat using two forks. Return meat to sauce. 3. Serve on toasted hamburger buns, or with rice. |
