We modified Audrey M's Crock Pot Barbecue Chicken. When serving, the tomatoes would be your starchy vegetable Ingredients:
4 lbs frozen boneless chicken breasts |
diced tomato |
2 medium onions, finely chopped |
1/2 teaspoon chili powder |
1 teaspoon salt |
1 teaspoon fresh ground pepper |
1 cup ketchup |
1/2 cup cider vinegar |
1/3 cup worcestershire sauce |
4 minced garlic cloves |
1/8 teaspoon tabasco sauce (to taste) |
Directions:
1. Put the frozen chicken in crock pot. 2. Combine all other ingredients and pour over chicken. 3. Cook on Low for 5 to 6 hours. 4. Serve with brown rice or shred and serve on a whole wheat bun. |
