I had to make something for my lunches for the week and it had to be WW friendly. I found most of this stuff in my cupboard and it turned out really good. Low in fat and full of flavor! After cooking I divided this up into 5 lunch containers. Ingredients:
4 chicken breasts |
1/4 cup balsamic vinegar |
1 tablespoon soy sauce |
1 tablespoon worcestershire sauce |
4 large fresh garlic cloves |
1/2 cup fresh cilantro |
1 (8 ounce) can low-fat cream of chicken soup |
2 cups rice |
Directions:
1. Place everything in a crock pot, except for the rice, and cook on high for 5 hours. After 5 hours, remove chicken and cut into small chunks. Put back into sauce mix and add two cups quick cooking rice. Cook on high for an additional 30 minutes. |
