Crock-pot Applesauce

Easiest way to make homemade applesauce, ever. I put this on when I go to bed and it's ready when we wake in the morning. Divine warm with a small pat of butter or simply chilled. And you'll never buy grocery store applesauce again.
Ingredients:
5 lbs apples, peeled, cored, and sliced
juice of half a lemon
3/4 cup packed brown sugar
1/2 cup pure apple juice
Directions:
1. Lightly spray crock with nonstick spray. Combine the apples and lemon juice in crock; mix in brown sugar. Pour apple juice over all.
2. Cook on Low for 6 to 8 hours. Give it a good stir after six hours; depending upon the type of apple you used, the apples should easily stir down into a sauce or be well on their way (personally, we like it chunkier). Cook up to two additional hours until you've reached desired consistency. If you still want a smoother sauce, mash or use immersion blender to preference. If you want cinnamon applesauce, stir in 1 teaspoon of ground cinnamon and continue cooking another 15-30 minutes.
