Crock Pot Aloo Rajma(Kidney Bean) Curry |

This is a semi-authentic Kidney Bean Curry that tastes very good and it also very easy. I serve it over steamed Basmati Rice and with Roti or Naan on the side. Ingredients:
5 medium russet potatoes, diced, i usually do not peel them |
3 (10 ounce) cans ro*tel tomatoes, i use 2 original and 1 hot |
31 ounces canned kidney beans, rinsed and drained |
2 onions, chopped |
2 tablespoons vegetable oil |
1 tablespoon curry powder |
Directions:
1. Heat vegetable oil in skillet. 2. Add curry powder and saute for 1 minute or until fragrant. 3. Add onions and saute for 2-3 minutes or until lightly browned. 4. Add Ro*tel and simmer on low for 2 minutes. 5. Pour mixture in crockpot. 6. Add potatoes and kidney beans. 7. Stir mixture. 8. Cook on low 6-8 hours or on high 3-6 hours. 9. Serve over rice. |
