Crisscross Peanut Butter Cookies |

Easy to make and delicious. Children love them. Ingredients:
1 1/4 cups sifted flour |
3/4 teaspoon baking soda |
1/2 cup soft butter or 1/2 cup margarine |
1/2 cup chunky peanut butter |
1/2 cup light brown sugar, firmly packed |
1/2 cup granulated sugar |
1 egg |
1 teaspoon vanilla |
Directions:
1. Sift dry ingredients. 2. In large bowl, combine butter and peanut butter. Beat for 30 seconds at medium speed. 3. Add sugar and brown sugar; and beat until fluffy. 4. Add egg and vanilla; beat well. 5. Stir in flour mixture and beat until well blended. 6. Refrigerate, covered, at least 1 hour. 7. Form dough into 1 inch balls. 8. Place on lightly greased cookie sheets. Flatten with fork, dipped in flour, making a criss cross pattern. 9. Bake at 375 degrees for 10 to 12 minutes or until lightly browned. 10. Cool 1 minute; remove to rack. |
