Great way for zucchini instead of frying Ingredients:
1/2 cup pasta sauce or salsa |
1/4 cup sour cream |
3/4 lb zucchini |
2/3 cup seasoned bread crumbs |
1/2 cup cornmeal |
2 tbsp grated parmesan |
2 tbsp minced parsley |
salt to taste |
1/3 cup flour |
2 large eggs beaten |
Directions:
1. Preheat oven to 450F. Combine sauce and sour cream; set aside. 2. Cut each zucchini lengthwise into quarters, cut each quarter crosswise into 3 pieces. 3. Combine the breadcrumbs and the next 4 ingredients (thru salt) in a 4. shallow dish. 5. Dredge zucchini pieces in flour. 6. Dip in egg and dredge in breadcrumb mixture. 7. Place the zucchini on a large baking sheet coated with garlic cooking spray. 8. Bake at 450 for 25 minutes turning once until lightly browned and crisp. 9. Serve with sauce. |
