Used as an appetizer, or a late-night snack, these little veggie wontons will leave you satisfied! :+D Ingredients:
1 tbsp vegetable oil |
1/2 cup (chopped onion |
1 tbsp chopped garlic |
2 tbsp chopped ginger |
1/4 tsp chili flakes |
1 cup chopped bok choi stems (bok choi is chinese cabbage |
8 oz shiitake mushrooms, stems removed, chopped (about 3 cups) |
2/3 cup fresh bean sprouts |
2 cups chopped bok choi leaves |
1/4 cup chopped coriander |
salt |
1 package wonton wrappers |
vegetable oil for frying |
Directions:
1. Heat vegetable oil in a large skillet over medium heat. 2. Add onion, and sauté for 2 minutes or until softened. 3. Add garlic, ginger and chili flakes, and sauté for 1 minute or until fragrant. 4. Add bok choi stems and sauté for 1 minute or until softened. 5. Add mushrooms and sauté for 1 minute, or until juicy. 6. Add bean sprouts and sauté for 1 minute. 7. Add bok choi leaves and stir for 1 minute or until wilted. 8. Remove from heat, stir in coriander and season with salt to taste. 9. Cool to room temperature. 10. Lay out wonton wrappers, a few at a time, on the working surface. 11. Spoon about 1 tbsp of filling in the middle of each, moisten edges with water and fold in half to form a triangle, then bring the 2 farthest points together in the middle, and pinch to seal. 12. Continue working until you have used up all the filling. 13. Place wontons on a tray, cover in plastic wrap and reserve in refrigerator until ready to cook. 14. Heat vegetable oil (filled to about 2 inches) in a wok or high-sided skillet over medium-high heat 15. Working in batches, fry wontons for 2 to 3 minutes, or until golden and crisp. 16. Drain on paper towels and serve with dipping sauce(recipe follows). 17. =================================== 18. Dipping sauce 19. 1/2 cup hoisin sauce 20. 1/2 cup soy sauce 21. 1 tbsp sesame oil 22. 1 tbsp grated ginger 23. Stir hoisin sauce, soy sauce, sesame oil and ginger together in a small bowl. 24.
