Super easy weeknight recipe from Kraft. I usually add a few tablespoons of low salt or salt-free taco seasoning to the cracker crumbs. Ingredients:
4 small boneless skinless chicken breast halves (1 lb.) |
1 egg, beaten |
12 saltine crackers, finely crushed (about 1/2 cup) |
2 tablespoons butter, melted |
1 cup salsa |
1 cup mexican style finely shredded cheese |
Directions:
1. HEAT oven to 425ºF. 2. DIP chicken in egg then in cracker crumbs, turning to evenly coat both sides of each piece. 3. PLACE in 13x9-inch baking dish sprayed with cooking spray; drizzle with butter. 4. BAKE 20 minute or until chicken is done (165ºF). Top with salsa and cheese; bake 5 minute or until cheese is melted. |
