Crispy Roasted Pork Belly

Ingredients:
1 (1 3/4-lb.) pork belly
1 teaspoon salt
1/2 teaspoon pepper
1 large onion, cut into wedges
2 celery ribs, coarsely chopped
2 carrots, coarsely chopped
4 garlic cloves, crushed
6 fresh thyme sprigs
2 bay leaves
1/2 cup chicken broth
Directions:
1. Preheat oven to 325º. Make 1/4-inch-deep cuts in fattiest side of pork. Sprinkle pork with salt and pepper. Place in a large roasting pan. Place onion and next 5 ingredients around pork. Pour broth in pan, and cover tightly with aluminum foil.
2. Bake at 325º for 3 to 3 1/2 hours or until fork-tender. Remove pork from pan, and let stand 15 minutes. Discard vegetables and liquid in pan.
3. Cook pork in a large cast-iron skillet over medium-low heat 8 to 10 minutes on each side or until browned and crisp.
