CRISPY RANCH POTATOES This recipe came from an estate sale. I obtained it when I purchased the family collection from the Cartwright Estate in Richardson, Texas in 2002.
Ingredients:
4 large russet potatoes with skin
1 tablespoon vegetable oil
1 package dry ranch dressing mix
1 cup sour cream
3 tablespoons fresh chives chopped
Directions:
1. Preheat oven to 400 then sliced potatoes into 1/4 thick slices and place in large bowl.
2. Add oil to potatoes and mix lightly then add dressing mix tossing to coat evenly.
3. Arrange potato slices in single layer on a greased baking sheet then bake 40 minutes.
4. Serve warm with sour cream and chives drizzled over top.
