These crispy potato patties are great as is or served topped with cheese. They're best served hot, but also good cold too! Ingredients:
2 cups mashed potatoes, slightly salted |
1 egg, beaten |
1 small onion, finely chopped |
1/3 cup self-rising flour |
oil for frying |
Directions:
1. Mix mashed potatoes, egg and onion together, add flour and stir to combine well. 2. Shape into patties then fry in about 1/2-inch of hot oil, make sure not to have heat so high it smokes! 3. Brown one side, then turn and brown other side, Careful not to overcook! 4. Drain on papertowels. 5. You lightly salt them and eat them plain or with cheese! Also great with applesauce for a snack! |
