Crispy Potato and Carrot Casserole |

Taken from The Basic Shelf Cookbook. Ingredients:
6 potatoes, grated |
3 carrots, grated |
1 onion, grated |
1 cup skim milk powder |
1/4 cup rolled oats |
2 eggs |
3 tablespoons oil |
1 teaspoon garlic powder |
1 teaspoon salt |
1 teaspoon pepper |
1 cup cheese, grated |
Directions:
1. Mix grated potatoes, carrots and onions in a large bowl. 2. Stir in skim milk powder, oats, eggs, oil, garlic powder, salt and pepper. 3. Heat oven to 350°F. 4. Lightly grease a 13x9 pan. 5. Spread mixture evenly into the pan. 6. Bake about 30-40 minutes or until potatoes are done. 7. Sprinkle with cheese. 8. Return to oven for a few minutes to melt cheese.6. |
