This is another recipe from the cookbook Pass It On. My daughters enjoy getting into the act making these by rolling them in the confectioners' sugar. Ingredients:
1/2 cup butter |
1/4 cup confectioners' sugar |
2 cups all-purpose flour |
1/4 teaspoon salt |
1 cup pecans, chopped |
1 tablespoon vanilla extract |
1 tablespoon ice water |
confectioners' sugar |
Directions:
1. Preheat the oven to 350 degrees. 2. In a large bowl, beat the butter until creamy. 3. Gradually add in the confectioners' sugar; mix well. 4. Combine the flour and salt in a smaller bowl; add to the butter mixture and beat on low speed until combined. 5. Add in the pecans, vanilla and ice water. 6. Shape the dough in 4 sticks and place on greased baking sheets. 7. Bake at 350 degrees for 12-15 minutes, or until browned. 8. Roll in confectioners' sugar and store in airtight containers for up to 2 weeks. 9. These also may be frozen for up to 2 months. |
