Crispy Parmesan Wedges With Creamy Dipping Sauce |

A great snack for guests, the family or the kids. Vary the herbs and spices for a different slant, or even the veges... Ingredients:
300g sweet potatoes cut into wedges (i don't peel- just scrub) |
300g sebago potatoes cut into wedges (scrubbed but not peeled) |
1 tbsp olive oil |
sea salt, cracked black pepper, chili flakes |
2 tsp thyme leaves |
1/3 cup parmesan, finely grated |
sauce |
1/4 cup sour cream or natural yoghurt |
1/4 cup whole egg mayonnaise |
1 clove gralic- peeled and crushed |
2 tsp lemon juice |
Directions:
1. Preheat oven to 200degC 2. Sauce: combine sauce ingreadients and set aside 3. Place wedges on baking tray and sprinkle with oil. Toss to coat and roast 30mins. 4. Sprinkle seasoning and parmesan ovet the potator wedges and roast a further 10 mins or until the parmesan is crispy and golden brown. |
