Use the biggest prawns you can find. Ingredients:
1 1/2 lbs king prawns, peeled and deveined with tails intact |
3 teaspoons cornstarch |
2 teaspoons water |
2 teaspoons light soy sauce |
1 egg yolk, lightly beaten |
1 teaspoon sesame oil |
vegetable oil (for deep frying) |
2 tablespoons honey |
2 tablespoons dry sherry |
2 garlic cloves |
5 teaspoons light soy sauce |
Directions:
1. Blend the cornstarch with water until dissolved. Add the prawns, soy sauce, egg, and sesame oil and mix well. 2. Combine sauce ingredients and set aside. 3. Heat the oil in a wok and deep fry half the prawns for 1 minute. Remove from wok using a slotted spoon and drain on a paper towel. Repeat with remaining prawns. 4. Drain the oil from the wok and wipe clean. Heat wok to medium high and add the reserved sauce and simmer 1 1/2 minutes. Add the prawns and stir-fry for 30 seconds, or until hot and just cooked through. |
