Crispy Jicama Salad

Ingredients:
4 cups jicama, diced
2 large carrots, peeled and cut into strips
1 red bell pepper, cut into strips
1 small sweet onion, thinly sliced
2 tablespoons cilantro, finely chopped
6 tablespoons vegetable broth
4 tablespoons seasoned rice vinegar
2 tablespoons lime juice
2 teaspoons stone ground mustard
1/4 teaspoon salt
1/2 teaspoon crushed red pepper flakes
Directions:
1. In a salad bowl, combine the jimaca, carrot, bell pepper, onion, and cilantro and toss to mix.
2. In a separate bowl, combine the remaining ingredients. Pour over the vegetables and toss to mix place into refrigerator for two hours.
