Serve with bbq meats. Ingredients:
4 cups jicama, diced |
2 large carrots, peeled and cut into strips |
1 red bell pepper, cut into strips |
1 small sweet onion, thinly sliced |
2 tablespoons cilantro, finely chopped |
6 tablespoons vegetable broth |
4 tablespoons seasoned rice vinegar |
2 tablespoons lime juice |
2 teaspoons stone ground mustard |
1/4 teaspoon salt |
1/2 teaspoon crushed red pepper flakes |
Directions:
1. In a salad bowl, combine the jimaca, carrot, bell pepper, onion, and cilantro and toss to mix. 2. In a separate bowl, combine the remaining ingredients. Pour over the vegetables and toss to mix place into refrigerator for two hours. |
