Crispy Fried Sweet Potatoes |

These sweet potatoes are boiled, then diced and fried until crispy with bacon, a touch of sugar and onions. Cooking time includes boiling of potatoes. Really good! Ingredients:
1 1/2 lbs sweet potatoes |
3 slices bacon, sliced in 1/2 inch pieces |
1 small onion, diced |
1 teaspoon salt, to taste |
1/2 teaspoon sugar |
Directions:
1. Boil sweet potatoes and cool. 2. Dice sweet potatoes and set aside. 3. In skillet, cook bacon and onion until tender. 4. Add sweet potatoes and sprinkle with salt and sugar. 5. Cook uncovered over medium heat until potatoes are crispy on the bottom. 6. Turn and crisp the other side. |
