No more soggy eggplant!The secret is in the cornstarch.It keeps the eggplant crisp. Ingredients:
1 eggplant |
2 eggs |
1/2 teaspoon salt |
fresh breadcrumb |
1 tablespoon parmesan cheese |
1/2 cup cornstarch |
oil |
Directions:
1. Peel eggplant and slice into 1/4 inch slices. 2. Add salt to egg and beat. 3. Add cheese to breadcrumbs. 4. Dip eggplant slices into cornstarch and shake off excess. 5. Dip into egg. 6. Press breadcrumb onto slices. 7. Fry till golden. 8. Salt to taste. |
