eggplants / baigan / aubergines Ingredients:
2 medium size brinjals (eggplants / baigan / aubergines) |
red chilly powder to taste |
salt to taste |
1/2 cup gram flour |
pinch baking soda |
oil to deep fry |
Directions:
1. Make semi thick paste of gram flour, salt, red chilly powder, baking soda and water 2. Thinly slice brinjals 3. Mix 1/2 tsp salt and 1/2 tsp red chilly powder 4. Sprinkle this mixture over each slice of brinjal 5. keep for 1/2 hour 6. Then dip in paste one bye one and deep fry to brown (like pakoras) 7. Serve hot with mint or coriander dip |
