Crispy Fish With Chipotle Cream

Fast, fun and delicious! Adjust the heat to yoour taste by adding more or less chipotle.
Ingredients:
1/4 cup plain yogurt
1/4 cup mayonnaise (not miracle whip)
1 chipotle pepper, minced, plus
1 teaspoon adobo sauce
1 teaspoon sugar
salt and pepper
1 large avocado
1 cod fish fillet, de-boned
1/2 cup plain breadcrumbs
2 teaspoons garlic powder
1 teaspoon paprika
1 lime
salt and pepper
1 tablespoon oil (or cooking spray)
Directions:
1. Squeeze lime juice over filet and allow to sit for a minute. Salt and pepper lightly.
2. Mix breadcrumbs, garlic powder and paprika. Coat filet with breadcrumb mixture.
3. Cook fish in skillet over medium heat until crust is golden brown and fish is flaky but still firm, about 3-5 minutes a side.
4. While fish is cooking, mix the first five ingredients well.
5. Serve fish over sliced avocado with chipotle sauce.
