Crispy Crunchy Tuna And Fruit Salad |

A cool main dish salad for a quick lunch on a hot summer day. Adapted from Best Recipes from the backs of Boxes, Bottles, Cans and Jars, but I've left the brand names out. Ingredients:
20 ounce can pineapple slices, reserve 2 tbsp juice |
7 ounce can white tuna, drained |
11 ounce can mandarin oranges, drained |
1 medium cucumber, peeled and diced |
1/4 cup chopped green onion |
lettuce leaves to garnish plates |
1 cup mayonnaise |
1 tbsp lemon juice |
Directions:
1. Drain the pineapple slices, but keep 2 Tbsp to use in dressing. 2. In a medium bowl, break up the large chunks of tuna, then toss with the orange pieces, cucumber, and green onion. 3. Line 5 salad plates with lettuce leaves. 4. Spoon tuna mixture over lettuce on plates. 5. Top each plate with 2 slices of pineapple. 6. For dressing, blend together the 2 Tbsp pineapple juice with the mayonnaise and lemon juice. 7. Drizzle dressing over each salad portion and serve immediately. |
