These little babies are delicious and add just enough crunch to tantalize the taste buds for the main course. Ingredients:
2 8 1/2 cans of artichoke hearts |
2 large eggs |
1/2 cup all purpose flour |
1/2 cup of yellow cornmeal |
2 teaspoons italian seasoning |
1 1/2 cups of light olive oil |
Directions:
1. Drain the artichokes, pat dry, and cut them in half, lengthwise. 2. In a small shallow bowl, beat the eggs. 3. In another small bowl, mix the flour, cornmeal, and Italian seasoning 4. In a small skillet, heat the oil on med-high until hot. 5. Dip the artichoke halves into the egg mixture] 6. Then dip into the flour mixture, turning to coat. 7. Drop a few at a time into the hot oil. 8. Fry, turning once, until golden, about 6 minutes. 9. Serve immediately. |
