Crispy Cinnamon French Toast |

A cinnamon heavy topping added prior to cooking creates a lovely caramelized crunchiness to this breakfast favorite. No need for any extra syrup or honey with this one! Ingredients:
1lb thick sliced bread or croissants(my preference) |
4-5 large eggs |
about 1/2 cup half and half |
2t quality vanilla |
pinch of sea or kosher salt |
1/3 cup raw sugar(sub light brown, if necessary, but use raw if you can |
1t quality cinnamon |
few t of butter, for frying |
Directions:
1. In shallow pan or dish(I use a pie plate), beat eggs well. 2. Add half and half, vanilla and salt and whisk together well. 3. In a small bowl, combine the raw sugar and cinnamon. Mix to combine. 4. Heat a T or so of butter in a skillet or griddle over medium high heat. 5. Working with a few at a time, add bread slices to the egg mixture and let soak in, slightly, to each side. 6. Just before placing on the griddle, sprinkle one side liberally with the cinnamon/sugar mixture and place it sugar side down. 7. Cook until done on the first side, sprinkle upside with the cinnamon/sugar, flip, and cook until golden and cooked through. 8. Serve immediately. |
