This is another great snack recipe. Ingredients:
vegetable oil, for frying (3 cups) |
3 (15 ounce) cans chickpeas, drained rinsed and patted dry |
1 1/2 tablespoons ground coriander |
1 tablespoon ground cumin |
1 cup all-purpose flour |
kosher salt |
Directions:
1. Heat oil to 350 degrees F in a large saucepan; line a baking sheet with paper towels. 2. In a medium bowl, toss the chickpeas with the coriander and cumin; add flour and toss to coat the chickpeas, then transfer to a sieve and tap to release excess flour. 3. Fry chickpeas (1/3 at a time) in oil, stirring occasionally, until browned and crispy, about 8 minutes; use a slotted spoon to remove to paper towel lined pan and sprinkle liberally with salt. 4. Repeat with remaining chickpeas; let cool and serve. |
