Crispy Cheese-Baked Catfish |

Ingredients:
1/2 crushed corn flakes cereal |
1/4 cup (1 ounce) finely shredded reduced-fat sharp cheddar cheese |
1/8 teaspoon ground pepper |
1 tablespoon plus 1 teaspoon dijon mustard |
4 (4-ounce) farm-raised catfish fillets |
vegetable cooking spray |
Directions:
1. Combine first 3 ingredients in a small bowl, stirring well. Spread 1 teaspoon mustard on top of each fish fillet; dredge mustard-coated side of each fillet in crumb mixture. 2. Place fish, coated sides up, on a baking sheet coated with cooking spray. Bake at 425° for 15 minutes or until fish flakes easily when tested with a fork. |
