A favorite from the Polish side of the family, Grandma Plaza always made this as part of our Christmas Eve supper. Now that was a feast to remember. We serve this now with a grilled meat or roast chicken. Ingredients:
2 medium or one very large cauliflower, separated into flowerettes |
1 stick of butter |
1 to 1 1/2 cups of dry bread crumbs unseasoned |
3 or so anchovies, soaked in milk 20 minutes, drained |
4 to 5 grinds of black pepper |
3 to 4 passes of fresh ground nutmeg on a rasp |
1/4 cup or so of finely minced flat leaf parley |
Directions:
1. Steam washed cauliflower in colander over an inch of boiling water until just able to be pierced with a fork. 2. Melt butter in large fry pan, 3. Cook butter very gently until a pale golden brown, almost foamy. 4. Mash the anchovies into the butter. 5. Stir well. 6. Add bread crumbs and cook until toasty brown. 7. Season with pepper and nutmeg. 8. Add drained and dried cauliflower. 9. Toss and sprinkle with parsley. |
