Carrot patties Ingredients:
2 eggs, beaten |
1 tablespoon onion, finely chopped |
3 cups carrots, grated |
Directions:
1. Combine eggs and onion; mix in carrots. Make 8 to 9 patties about 1/2 cup each. 2. Flatten in nonstick skillet and cook until crisp and golden brown. 3. Turn only once. |
