This may not make you sing like The Cranberries but, this favorite recipe of my Mom’s is a repeat performer each Thanksgiving. My daughter can hardly wait to have her Grandmother’s Crimson Cranberry Salad each Thanksgiving. Read more . This coming from the picky eater… While the cranberry itself may not sing it is a traditional holiday fruit and is renowned for its medicinal properties rich in potassium, provides relieve from UTI’s, helps to prevent heart disease, stroke, tooth decay, gum disease and stomach ulcers. This little crimson gem adds fiber to the diet, has 5 times the antioxidant levels of broccoli ,and is known to reduce levels of total cholesterol and LDL. You can't go wrong with this little winner!
Ingredients:
crimson cranberry salad
1 lb. cranberries
1 1/2 cups water
3/4 cup sugar
2 small packages cherry jello
2 cups cold water
1 cup seedless white grapes (cut into halves)
2 cups crushed pineapple
1 cup finely chopped celery
topping
1/4 cup milk
16 marshmallows
1/2 cups cottage cheese
1 cup whipped cream
low calorie topping: (alternate topping, does not set as well)
1 – 8oz cool whip (fat free)
1 carton 24oz. of cottage cheese (bet in blender until smooth)
1 – 8 oz cream cheese
2-3 tbls of sugar
Directions:
1. Cranberry Salad:
2. Cook berries until they start popping.
3. Then cook 5 minutes more.
4. Blend with rotary beater
5. Add 3/4 cup sugar and 2 small packages cherry jello while cranberries are still hot.
6. Add 2 cups cold water
7. Chill until slightly congealed
8. Add 1 cup seedless white grapes (cut into halves), 2 cups crushed pineapple, 1 cup finely chopped celery.
9. Stir in and let it set.
10. Add topping.

12. Topping:
13. Combine milk and marshmallows and melt over hot water until marshmallows are melted.
14. Beat in cottage cheese.
15. Fold in whipped cream and spread on cranberry salad which has been put in a pan (or use frozen whipped cream).

17. Low calorie Topping: (Alternate topping, does not set as well)
18. Whip the cool whip, cottage cheese, and cream cheese together.
19. Mix in 2-3 Tbls of sugar
20. Spread dressing on top of cranberry salad which has been put in an oblong pan.
21. Let set.
