Recipe is quick and easy to fix. This came from my mother, she makes it often on the island. Ingredients:
1 lb crabmeat |
1 1/2 cups leftover mashed potatoes or 1 1/2 cups instant mashed potatoes |
1/3 cup breadcrumbs |
1 egg, scrambled |
1 large onion, chopped |
1/2 teaspoon salt |
1 teaspoon pepper |
Directions:
1. Mix all together as a hash and fry in oil until browned on both sides. 2. Great for breakfast with eggs or main meal. 3. Can substitute fish for crab. |
