From Canadian Living Cookbook. I didn't want to lose this recipe so thought I would post it on Recipezaar. Enjoy! Ingredients:
1/2 lb lard or 1/2 lb finely chopped pork fatback |
2 lbs ground pork |
1 cup water |
1 cup chopped onion |
2 garlic cloves, crushed |
2 teaspoons salt |
1/2 teaspoon dried savory |
1/4 teaspoon pepper |
1/4 teaspoon cinnamon |
1/4 teaspoon clove |
Directions:
1. In large, heavy pot over low heat, cook pork fat until browned, stirring often; set aside both browned bits and melted fat. 2. Simmer ground pork with water over low heat for about 1 hour. Add melted fat and browned bits, onion, garlic, salt, savory, pepper, cinnamon and cloves. Cover and simmer for about 2 hours, stirring occasionally. 3. Let mixter cool. Stir well; taste and adjust seasoning. Pack into small pots. Cover and refrigerate. Bring to room temperature before serving. |
