Cretan-style Bruschetta Salad Kritikos Dakos |

A traditional meze or light meal on the island of Crete, dakos is often called Greek bruschetta, and is easy to make with few ingredients and no cooking. Ingredients:
3/4 cup feta cheese; crumbled |
1 teaspoon oregano |
2 tablespoons kalamata olives; chopped |
1/2 cup ripe tomatoes; chopped |
3 tablespoons olive oil |
4 cretan barley rusks |
Directions:
1. Combine first five ingredients in a bowl and place in refrigerator for at least an hour or overnight. 2. Sprinkle rusks with a few drops of water to moisten slightly. 3. Top each rusk with the prepared cheese and tomato mixture. 4. Set aside for 10 minutes and then serve with a chilled glass of white wine. |
