Sweet and delicious! Ingredients:
1 cup sifted all-purpose flour |
1/4 teaspoon salt |
2 tablespoons sugar |
1/2 teaspoon cinnamon |
1 cup milk |
2 tablespoons melted butter |
2 eggs, slightly beaten |
1 cup apricot jam |
confectioners' sugar |
Directions:
1. Combine flour, salt, sugar, and cinnamon. 2. In another bowl, combine milk, melted butter and eggs. 3. Stir into the flour mixture. 4. Beat until smooth. 5. Grease a 5 inch skillet. 6. Heat it, then pour in 3 tbsp batter. 7. Tilt pan quickly so batter covers bottom of pan. 8. Cook until pancake is browned on bottom. 9. Turn and brown on other side. 10. Keep crepes warm on dish in a warm oven. 11. When all are made, place 2 tsps jam in centre of each crepe. 12. Roll up. 13. Dust with confectioners sugar and serve. |
