Delicious and fun to make once you get your technique down and find a pan that works well for you. Ingredients:

*1.5 cups all-purpose flour |
*1 tablespoon sugar |
*0.5 teaspoon baking powder |
*0.5 teaspoon salt |
*2 cups milk |
*2 tablespoons melted butter or margarine |
*0.5 lemon juice |
*0.5 teaspoon vanilla |
*2 large eggs |
* lightly oil the pan with vegetable or canola. |
*topping &/or filling of your choice |
Directions:
1. Combine dry ingredients and whisk to blend. 2. in separate bowl add vanilla, eggs, and milk-whisk lightly until blended, do not whip or use hand mixer. 3. melt butter and lemon in separate bowl, slowly whisk while pouring into egg/milk mixture. 4. Now slowly add liquid to center of dry ingredients and slowly whisk to blend. mix until blended. I pour into a measuring cup for easier pouring into my pan. 5. cook in a pan 8 inces or larger on med to med high heat. 6. You can add ANY fillings and toppings you want. Lighter than pancakes and my household loves crepes. 7. Filling suggestion: any fruit or vegetables, Fage' greek yogurt. Nutella, cream cheese...possibilities are endless. 8. (((NOT just for breakfast))) 9. ENJOY!!! 10. TIP: I watched several videos on making crepes before I endeavored on my own. If your crepes turn out too thick you could need a larger pan, pour less, or work on the technique of rolling batter in the pan. |
