Zing up your everyday green beans into a wonderful Southern classic. From the Creole chapter of the United States Regional Cookbook, Culinary Arts Institute of Chicago, 1947. Ingredients:
1 tablespoon onion, minced |
1 tablespoon green bell pepper, minced |
2 tablespoons butter |
2 1/4 cups green beans, cooked (canned is fine) |
1 1/2 cups tomatoes, cooked (canned is fine) |
3/4 teaspoon salt |
1/8 teaspoon pepper |
2 tablespoons american cheese, grated |
8 soda crackers, crumbled finely |
Directions:
1. Brown onion and bell pepper in butter; combine with beans and tomatoes. 2. Season and place in a buttered baking dish. 3. Top with cracker crumbs and sprinkle with cheese. 4. Bake at 350F for 15 or 20 minutes or until cheese is melted and lightly browned. |
