Creole String/Green Beans

Zing up your everyday green beans into a wonderful Southern classic. From the Creole chapter of the United States Regional Cookbook, Culinary Arts Institute of Chicago, 1947.
Ingredients:
1 tablespoon onion, minced
1 tablespoon green bell pepper, minced
2 tablespoons butter
2 1/4 cups green beans, cooked (canned is fine)
1 1/2 cups tomatoes, cooked (canned is fine)
3/4 teaspoon salt
1/8 teaspoon pepper
2 tablespoons american cheese, grated
8 soda crackers, crumbled finely
Directions:
1. Brown onion and bell pepper in butter; combine with beans and tomatoes.
2. Season and place in a buttered baking dish.
3. Top with cracker crumbs and sprinkle with cheese.
4. Bake at 350F for 15 or 20 minutes or until cheese is melted and lightly browned.
