Ingredients:
5 bacon slices, chopped
1 large onion, chopped
1 1/2 pounds pattypan or 'peter pan' squash, chopped
1/2 cup chopped tomato
1 teaspoon creole seasoning
1/8 teaspoon salt
1/4 teaspoon pepper
Directions:
1. Cook chopped bacon in a large skillet over medium heat 5 minutes; add onion, and cook 7 minutes or until lightly browned. Add squash and remaining ingredients; cover and simmer 20 minutes or until squash is tender.
2. *1 1/2 pounds yellow squash may be substituted for either patty pan or peter pan squash.
