Mom cut this recipe off of one of her Texas Electric Service Bills This is another recipe clipping that Mom collected. I am sure there is one here on Zaar, but I just want to put it here for safe keeping. These are all cut out of magazines and I have no idea which magazine or newspaper they came from. Some are even hand written. Ingredients:
1 lb fresh okra |
1/2 cup onion, chopped |
2 tablespoons shortening |
1 (12 ounce) package smoked sausage |
1 teaspoon salt |
1 (10 ounce) can rotel tomatoes |
2 cups rice, cooked |
Directions:
1. Wash and slice okra. 2. Fry okra and onion in hot shortening until okra is no longer slimy( about 15 min ). 3. Cut sausage into 1/2 slices and add with salt and tomatoes. 4. Cover and simmer 20 minute. 5. Serve over rice. |
