This recipe will make about 60 of these deep-fried shrimp croquettes. They go really fast at get-togethers.
Ingredients:
2 tablesps. shortening
2 tablesps. flour
2 tablesps. onion; minced
1 tablesp. bell pepper; minced
1 tablesp. celery; minced
3/4 cup water
2 and 1/2 cups shrimp; cleaned & finely chopped or ground
1 teasp. salt
1/2 teasp. cayenne pepper
1 and 1/2 cups soft, moistened bread crumbs
2 tablesps. fresh parsley; minced
fine bread crumbs ( for coating )
shrimp sauce erath ( recipe below )
Directions:
1. Heat shortening; add flour & stir constantly until golden brown. Add onion, green bell pepper & celery. Stir until soft. Add water, shrimp & seasonings; simmer for 15 minutes. Remove from heat & cool slightly. Add 1 and 1/2 cups soft, moistened bread crumbs & parsley. Shape mixture into small balls & roll in fine, dry bread crumbs. Fry in deep hot shortening (not oil, as they don't get nice & crispy & they absorb too much oil). Fry for about 2 minutes, or until golden brown. Drain on paper towels. Serve with Shrimp Sauce Erath: Combine 1/4 cup mayonnaise,1/4 cup worcestershire sauce,1/4 cup ketchup, 1 teasp. horseradish, 1/4 teasp. garlic powder, 1/4 teasp. black pepper & 1/8 teasp. cayenne pepper. Mix well & chill thoroughly. Sprinkle minced hard-boiled egg on top of sauce before serving.
