Creole Shrimp and Sausage Stew |

I found this in a magazine. You could use turkey sausage to go more healthy. Serve with crusty bread and some hot sauce. Ingredients:
2 teaspoons olive oil |
1 cup green bell pepper, chopped |
1 cup smoked sausage, sliced thin |
1 teaspoon garlic, minced |
3/4 cup chicken broth |
1 (10 ounce) can diced tomatoes with green chilies (rotel) |
8 ounces medium shrimp, peeled and deveined |
1 (15 ounce) can kidney beans, rinsed and drained |
2 tablespoons parsley, chopped |
Directions:
1. Heat a large saucepan over medium-high heat. Add oil to pan; swirl to coat. 2. Add bell pepper, sausage and garlic to pan; saute 3 minutes or until bell pepper is tender, stirring occasionally. 3. Add broth and tomatoes; bring to a boil. 4. Stir in shrimp and beans; cover, reduce heat, and simmer 6 minutes or until shrimp are done. 5. Sprinkle with parsley. |
