Creole Sauce (Frances Virginia Tea Room) |

I make this ahead and freeze in one cup portions to use for a quick shrimp creole. Ingredients:
4 tablespoons oil or 4 tablespoons butter |
1 cup diced celery |
1 cup diced onion |
1 cup diced green pepper |
1 garlic clove, minced |
3 tablespoons flour |
2 (1 lb) containers tomatoes, chopped (stewed tomatoes may be used) |
1/2 cup catsup |
1 tablespoon worcestershire sauce |
1 pinch sugar |
1/2 teaspoon salt |
Directions:
1. Saute celery, onion, pepper and garlic in fat. Blend in flour. Add tomatoes, catsup, Worcestershire Sauce, sugar and salt. Stir well to blend. Cook slowly until mixture thickens. |
